Taki Breakfast Taco

I wish I could take credit for this brilliant idea. Taki's alone are already such a perfect snack. They are only elevated by being wrapped in a flour tortillas with queso. I first came across this great idea on one of my trips to Tyson's Tacos. This quintessentially Austin taco joint is the King of breakfast tacos in the city. Others will mention another "T" named taco place, but Tyson's knocks them out of the water.  Tyson's selection of tacos is almost as weird as Austin. However, it  doesn't currently have the Taki taco unless you build you own. Which is exactly what we are going to do.

Ingredients:

1 Bag Takis
Queso
3 eggs
3 Flour Tortillas
Cilantro (optional)
Jalapenos (optional)
Salt & Pepper
1 tbsp olive oil

Directions

Warm the tortillas on a griddle or in the microwave. 
As the tortillas start to warm up add a bit of queso to each tortilla and continue to heat
Remove the tortillas from heat and layer Takis into the queso

Heat a medium skillet with 1 tbsp of olive oil
Crack the eggs into a bowl and whisk with salt and pepper
Pour the eggs into the skillet and stir continuously for 1 minute and then remove from heat and scoop the egg mixture on to each tortilla.
Top with cilantro and jalapenos if you are into that sort  of thing
