Gnocchi & Creamy Pesto
Gnocchi can be a simple and elegant dish. When you have the time on your hands it is worth it to try making the the pasta and the sauce from scratch, but when your in a crunch this is something easy to make that still looks like you put the effort in to making this creamy Italian classic. I was inspired to make this when I came across fresh gnocchi at a market in Berlin. It's impossible to pass up fresh pasta! The Creamy pesto also works great as a dip for veggies of spread on top of a grilled steak.

Ingredients
1 package of gnocchi
1/2 cup basil pesto
1/2 cup greek yogurt
Parmesan and cracked fresh pepper to taste

Directions
Cook the gnocchi according to the package
After you have drained the gnocchi, heat some oil in a skillet and spread the gnocchi out in a single layer.
- You might not be able to cook all the gnocchi at once, but having it in a single layer will help to make sure each piece toasts evenly.
- In a small bowl mix the basil pesto and yogurt together
- Spoon the pesto on top of the gnocchi
- Grate parmesan and pepper on top to taste
