Taste Test Thursday: Chorizo & Manchego Grits
I love Spain and I love breakfast! This dish combines the bold flavors of the chorizo with the creamy texture grits. Top it with an egg and you've got a taste of Spain for breakfast (or anyother meal of the day) This recipe will make 4 servings.
1 cup grits
4 cup water
1 tsp salt
1 tsp pepper
1 Tbsp butter
1 cup whole milk
1 block of manchego cheese, shredded
1 pound chorizo
In a pot, bring the milk, water, and salt to a boil. Then stir in the dry grits. Once this mixture is boiling, reduce it to a simmer and stir occasionally. As the grits start to thicken, and the butter and cheese and stir until they have melted. Then remove from heat.
In a skillet, cook the chorizo until it has browned. Then mix it in with the grits.
In the same skillet, fry 4 eggs in the oil left from the chorizo. Serve the grits and chorizo in a bowl with the egg on top.
