Taste Taste Thursday: Salsa Verde
For years I have been on a quest to recreate the salsa verde from my favorite college burrito stand. The burritos were consistently the perfect balance and the salsa was the best sauce to ever touch my lips. The stand closed down my senior year and since then it has been my mission to figure out how to recreate their salsa verde. I'm sure the passing years have elevated the salsa even more in my mind, but the recipe is the closest recreation I have ever made.
1 Serrano Pepper
1/4 Cup Oil
1/4 Cup Water
10 Cloves Garlic, unpeeled
1 Teaspoon Salt
- Preheat oven to 350 and assort all the peppers on a baking sheet
- Roast the peppers for 30 minutes. After 15 minutes add the unpeeled cloves of garlic.
- After everything is done roasting let it cool and then you will prepare it for the blender. Cut the tops off the peppers and cut them into smaller pieces. peel the garlic.
- In a blender combine the roasted ingredients, water, oil, salt, pepper, and squeeze in the lime juice. Blend until smooth.
