Taste Test Thursday: Goat Cheese & Vegetable Sandwich


The past two weeks have been pretty hectic and I have needed to eat on the run a lot. As a solution, I have been making sandwiches 1) because they are easy to take with me while I run around and 2) because everything is better in between bread. This sandwich is so quick and easy to make. People will think you've gone out of your way to make an elaborate sandwich, but it really doesn't take any extra time out of your day and is so much tastier than settling for whatever you can get your hands on when you are in a rush. The recipe below makes two sandwiches so you can share with friends or keep them both for yourself!

Ingredients:
2 Ciabatta Rolls
1 Zucchini, sliced lengthwise
1/2 red onion, sliced
1 Yellow bell pepper, sliced
5 button mushrooms, sliced
1 Lemon
A handful of spinach
1 small log of goat cheese
2 tsp olive oil
1 tsp pepper

- Broil the mushrooms, onion, bell pepper and zucchini for 10 minutes. 
- While the vegetables are cooking go ahead and sliced the rolls and spread half the log of goat cheese on each.
- In a small mixing bowl, squeeze the lemon over the spinach and toss with the olive oil and pepper.
-Spread a bed of spinach on the goat cheese and then layer the roasted vegetable on top of the spinach.
